Bio

Coach Hash grew up in the small Texas panhandle town of Canadian where he had a successful high-school rodeo career, having qualified to the Texas State High School Rodeo Finals in steer wrestling and saddle bronc riding.  He made it on to the National High School Finals Rodeo in the steer wrestling.

Coach Hash then attended Murray State College in Tishomingo, OK.  After completing his studies at MSC, he transferred to Oklahoma Panhandle State University in Goodwell, Ok.  While at OPSU Hash was lucky enough to experience a friendship, student, and coaching relationship with the legendary rodeo coach Dr. R Lynn “Doc” Gardner. After three years of rodeoing under “Doc,” Hash had won the Central Plains Region steer wrestling championship twice “93 and 94,” qualified for the College National Finals Rodeo in 1993, 94, 95, helped his team to a second-place finish in the nation in 1993, and a third-place finish in 1994. Hash also served a two-year term as Central Plains regional student director in which an extra year of eligibility

Jimboy's Tacos is a fast foodrestaurant chain and franchise, serving Mexican-American cuisine.

The company was founded in 1954 by Jim and Margaret Knudsen,[2][3][4] and is headquartered in Folsom, California.[1]

Its signature dish is a Parmesan dusted taco filled with ground beef, cheese and lettuce.[4] In 2022, the company had over 40 locations in California, Nevada and Texas.[1]

Concept

The restaurant bills its signature dish as "The Original American Taco", and a company spokesperson said, "We don’t consider ourselves authentic Mexican food".[5]
